Smoked Meatloaf on a Pellet Grill {Traeger, Z Grills, Pit Boss}

If  you like meat then you are going to love this recipe. That’s because we are using a pellet grill to make a smoked meatloaf!

This meatloaf is full of juicy goodness delicious ingredients. This meatloaf makes a great meal and you only need a handful of ingredients. So, are you ready to enjoy amazing flavors by making minimal efforts? Let’s start with the recipe!

Smoked Meatloaf on a Pellet Grill

Ingredients

  • Two pounds of ground meat (use 1 ½ pound of 85:15 ground beef and ½ pound of Spicy Italian sausage)
  • One egg (beaten)
  • 1 cup seasoned bread crumbs
  • ½ a cup of minced sweet onion
  • ½ a cup of fresh mozzarella
  • ½ a cup of parmesan cheese
  • 1 tsp Salt
  • Barbecue sauce
  • Brisket dry rub

Instructions

Preparing The Meatloaf

First of all, get the ground meat ready and add one cup of breadcrumbs into it, one beaten egg, minced sweet onion, fresh mozzarella, parmesan cheese, and salt.

Now, add 1/4 cup of the barbecue sauce into the mixture as it helps hold the meat together and adds some great flavor.

Once everything is added to the ball, mix everything properly and evenly. Now, put the mix onto a piece of foil or wax paper on the counter and press it around to make a meatloaf shape.

Take out the brisket rub and season the surface of the meatloaf.

Cooking The Meatloaf

Set your pellet grill (Traeger, Z Grills, Pit Boss) to 200F and use hickory or cherry wood pellets.

Place the meatloaf on the grill and let it smoke for one hour.  The meat will really soak up the smoke flavor at this point.

After an hour, glaze the meatloaf with your barbecue sauce and raise the temperature of your pellet grill to 325F.

Cook the meatloaf for another 30 minutes and start checking the internal temperature.  The meatloaf is done when it reaches an internal temperature of 165F.

Carefully remove the meatloaf from the grill.  It helps to use two spatulas to make sure it doesn’t fall apart.

Let the meatloaf cool for 15 minutes before slicing and serving.

Ingredients
  

  • 1.5 lbs ground beef
  • 0.5 lbs Spicy Italian sausage
  • 1 large egg
  • 1 cup seasoned bread crumbs
  • 1/2 cup diced sweet onions
  • 1/2 cup mozzarella cheese
  • 1/2 cup Parmesan cheese
  • 1 tsp salt
  • 1 cup sweet bbq sauce divided in half
  • 3 tbsp brisket rub

Instructions
 

  • Mix the meat, eggs, onion, breadcrumbs, salt, cheese and 1/4 cup of bbq sauce together.
  • Form the mix into a loaf.
  • Season the outside of the meatloaf with the brisket rub.
  • Smoke the meatloaf at 200F with hickory for one hour.
  • Glaze the meatloaf with the barbecue sauce and raise the temperature of your pellet grill to 325F.
  • Cook for 30 minutes or until an internal temperature of 165F is reached.

Notes

Serve this smoked meatloaf with mashed potatoes and green beans for a classic comfort food dinner.  
Any leftovers can be used for meatloaf sandwiches.  The smoke flavor will be better on the second day!
