Smoked Meatloaf on a Pellet Grill

Ground beef and Italian sausage are seasoned, formed into a loaf and smoked at two temperatures on a pellet grill.

Ingredients
  

  • 1.5 lbs ground beef
  • 0.5 lbs Spicy Italian sausage
  • 1 large egg
  • 1 cup seasoned bread crumbs
  • 1/2 cup diced sweet onions
  • 1/2 cup mozzarella cheese
  • 1/2 cup Parmesan cheese
  • 1 tsp salt
  • 1 cup sweet bbq sauce divided in half
  • 3 tbsp brisket rub

Method
 

  1. Mix the meat, eggs, onion, breadcrumbs, salt, cheese and 1/4 cup of bbq sauce together.
  2. Form the mix into a loaf.
  3. Season the outside of the meatloaf with the brisket rub.
  4. Smoke the meatloaf at 200F with hickory for one hour.
  5. Glaze the meatloaf with the barbecue sauce and raise the temperature of your pellet grill to 325F.
  6. Cook for 30 minutes or until an internal temperature of 165F is reached.

Notes

Serve this smoked meatloaf with mashed potatoes and green beans for a classic comfort food dinner.  
Any leftovers can be used for meatloaf sandwiches.  The smoke flavor will be better on the second day!
