Method
- Mix the meat, eggs, onion, breadcrumbs, salt, cheese and 1/4 cup of bbq sauce together.
- Form the mix into a loaf.
- Season the outside of the meatloaf with the brisket rub.
- Smoke the meatloaf at 200F with hickory for one hour.
- Glaze the meatloaf with the barbecue sauce and raise the temperature of your pellet grill to 325F.
- Cook for 30 minutes or until an internal temperature of 165F is reached.
Notes
Serve this smoked meatloaf with mashed potatoes and green beans for a classic comfort food dinner.
Any leftovers can be used for meatloaf sandwiches. The smoke flavor will be better on the second day!
